Cooking the Milk Street Way: Weekend Intensive

Spend a weekend learning how to cook the Milk Street Way. From Friday night through Sunday afternoon, you will be immersed in the principles and techniques that guide us toward creating vibrant, simple and bold recipes. By the end of the weekend, you'll have the skills to transform your own cooking, whether you use our recipes or not. Friday 2-6 p.m.: Every Milk Street meal follows our cooking theory: a belief in how ingredients and techniques work together to create vibrant meals. You'll begin the weekend with tasting experiments that illustrate the flavors and textures that form the foundation of this theory. Then you'll experiment at the stoves until you get two of our recipes just right. Saturday 12-4 p.m.: We spend the day exploring our approach to cooking with herbs and spices, fundamental Milk Street ingredients. Herbs and spices allow us to create the layers of flavor, contrast and freshness we look for in every successful recipe. You will experiment with a few simple techniques, hands-on cooking practice, tasting exercises and demonstration to practice maximizing the transformative qualities of these two ingredients. Sunday 12-4 p.m.: Comfortable now with the Milk Street approach to cooking, you close the weekend practicing the techniques we use to make food taste the best it can. Recipes included in the weekend may include: Tahini Cauliflower with Dukkah Thai Fried Rice Palestian Crispy Herb Omelette Spice-Crusted Steak and Smashed Chickpeas Ginger-Scallion Steamed Fish Hot-Oil Flashed Chard with Ginger Scallion and Chilies Sweet Potato Coconut Cake Coconut Tapioca Pudding with Mango and more.
